Spain’s most expensive Cabrales cheese ever auctioned: 36,000 euros for a 2.5-kilo piece

The cheese dairy Ángel Díaz Herrero in Tielve, a small village in the Picos de Europa, can boast of having sold at auction what is now considered the most expensive cheese in the world. It did so yesterday, during the 52nd edition of the ‘Best Cabrales of the Year’ contest held in Arenas de Cabrales (Asturias).

The auctioned cheese, a 2.5 kilogram piece, was selected as the best among the fifteen participating producers in the competition. The bidding started at 2:10 PM, with an initial price of 3,000 euros and the participation of nine establishments, mainly from Asturias and Madrid. Finally, it was Iván Suárez, from Llagar de Colloto in Oviedo, who became the highest bidder for the second consecutive year.

The figure reached this year exceeds by 6,000 euros the 30,000 paid in 2023 also by Llagar de Colloto. This restaurant had already broken records previously in 2018, when it paid 14,300 euros for the winning cheese, and again in 2019, with 20,500 euros.

The Cabrales cheese that has broken the Guinness World Record for auction price this year is characterized by being matured in natural caves for two to four months, under humid conditions that promote the growth of Penicillium molds. These molds give the cheese its distinctive texture and flavor, with blue veins that set it apart.
